The Japanese company has entered the Guinness Book of Records for the most expensive ice cream with a dessert of black and white truffles and golden flakes.
One serving of «Byakuya» weighing 4.4 fl oz», which translates to «white night», costs 880,000 yen (£5,113).
The high price reflects the rarity of some ingredients, according to Tokyo-based ice cream maker Cellato, its maker.
The most expensive ingredient in the dish is rare white truffles from the city of Alba in Italy's Piedmont region, which cost over £11,600 per 2.2 pounds (1 kg) of the fungus known as «white diamonds».
Described as «rich and smooth ice cream,» the dish also includes black truffles, cashews, milk, egg yolks, sugar, salt, rice, starch syrup, a drop of sake, and sake sediment (residual yeast left over from brewing beer). process).

The slightly sweet aroma of high-quality ginjo sake, combined with white truffles, creates a complex flavor, the company said.

The dessert was created by Tadayoshi Yamada, head chef at RiVi fusion restaurant in Osaka, who said he tried dozens of ingredient combinations until he was satisfied.
«We wanted to combine the best ingredients from both Europe and Japan in ice cream, which had not been done before, and Cellato was especially eager to use white truffles.

Cellato said the dish took more than 18 months and countless attempts.
